Single Serving Protein Cookie Recipe

Ingredients

1 Serving
Serving Size:82
  • 1 scoop whey protein powder, vanilla or peanut butter flavor
    • Use checkout code FMC for 10% off
    • vegan protein; casein protein
  • 2 tablespoons (30g) nut or seed butter
    • any will do - peanut, almond, cashew, tahini, sunflower
  • 1/4 teaspoon baking powder
  • 1 tablespoon (20g) agave
    • honey, maple, coconut sugar
  • 2 tablespoons water
    • Add more as needed
  • 1/4 cup chocolate chips (sweetened with Stevia) - OPTIONAL

 

Steps

Step 1

In a mixing bowl add all of the ingredients and stir until well mixed and a sticky batter forms.  Then add in any optional items like chocolate chips, sprinkles, freeze dried fruit, etc.

Note: the batter should NOT be wet. If it is, add a tablespoon of protein batter to the mix.

Use your hands to form a ball.

Best practice: place the protein ball in the freezer for 5 minutes (or fridge for 10 minutes).  This helps it become more solid so it won’t expand too quickly in the microwave.

Step 2

Put a piece of parchment paper on a microwaveable plate and place the protein ball in the center.  Mash it down using your hand until it covers the inside of your palm.  If you have big hands, then just make sure the cookie is not pressed too flatly or it will expand even more in the microwave and potentially dry out because it is so thin.

Step 3

Microwave for 45 seconds to 1 minute, checking it every 20 seconds to ensure it is not sizzling or about to explode.

Step 4

Remove from the microwave and let it cool for 3 – 5 minutes to harden, just like chewy cookies.
